Apple & Cinnamon Tea Cake

Simple, Fresh & Light.
A favourite at my house. Here it is paired with a thick and creamy mango yoghurt which compliments the Apple & Cinnamon perfectly.

Jamie Oliver's Crispy Salmon

I am so excited to share this with everyone (and quietly hopeful it looks and tastes great). Jamie Oliver has always been so appealing to me, as his recipes and cooking style are simple, (sometimes sloppy) and extremely nourishing. I have always preferred to cook meals which appeal to somebody with a huge appetite - and Jamie is just the man for the job! I have two brothers, and a father who was very excited to see this meal being made on Jamie's 30 Minute Meals, so I knew this recipe had to be done! I am extremely excited to be back in the kitchen as I have recently been banned from cooking by my mother (as there is an overload of muffins, cupcakes and cakes in the fridge & freezer). It's funny how I already feel happier and I have only just begun!

The Home-Made Christmas Ice Cream

There is something delicious about chunky ice-cream. It goes beyond it's timeless creamy taste, to a whole new level of dessert heaven. This Home-Made Christmas Ice Cream was an invention by my mother and myself inspired by an ice cream terrine she had made 5 years earlier from a magazine. We were slightly in the dark as to what to use, so we went overboard and thought all things Christmas would do the trick!

Recipe:
1 x tub of Vanilla Ice Cream
1 x 250g bag of glazed mixed coloured cherries
1 x Average Christmas Pudding
1 x Packet of Fruit Nut chocolate

Packed it is, and yummy it was! The instructions are extremely simple.

Instructions:
  1. Leave the Ice Cream out in room temperature until cool and partially melted
  2. Break the Christmas Pudding up (so it has a crumbled texture) and add to the ice cream
  3. Finely break and roughly chop the chocolate up into small pieces and add
  4. And simply add the glazed cherries
  5. Refrigerate for up to 2 days for a perfect ice cream, and chop while frozen!
